This recipe is super delicious and really easy too. I often will make a larger batch in the beginning of the week and then save it to have for multiple lunches.

The cranberries give it a hint of sweetness, the chilies a bit of heat, and the almonds a little crunch. If you are a mama, set some aside without the chilies and your kiddos will likely gobble it up too!

Cranberry, Green Chile & Almond Chicken Salad

Ingredients

  • 2 cups chicken breast; boiled and chopped
  • 1/2 cup plain greek yogurt
  • 1/4 cup Craisins
  • 1/2 can Hatch Green Chilies; chopped
  • 1/8 cup chopped almonds
  • splash of red wine vinegar

Instructions

  • Boil and chop chicken. Mix in remaining ingredients. Serve on toasted whole grain bread. Enjoy!
