These date cookies have been a family hit. The kids do not believe me when I tell them they are healthy for them and that they can eat as many as they’d like! They always stare at me as if I’ve just turned green.

These date cookies have no refined sugar and no flour and they’re packed with protein! Basically if a chocolate chip cookie and an energy bar had a baby…it would be this cookie!

One little tip…if you make this recipe…expect them to go fast…and be prepared to have to make more.

Dark Chocolate Date Cookies

Ingredients

  • 24 pitted dates
  • 1 cup crushed almonds
  • 2 eggs
  • 1 scoop Jamie Eason Chocolate Protein Powder
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 bag dark chocolate chips

Instructions

  • Blend dates and almonds in food processor until finely ground. It will appear to be more like a paste but it's okay if it's a bit chunky too.
  • Add eggs and vanilla.
  • Mix together protein powder, salt and baking soda then blend into mixture.
  • Fold in chocolate chips and place spoonfuls onto parchment paper lined cookie sheet.
  • Bake at 350 for 9-11 minutes. You want them to be slightly hardened on the outside but gooey on the inside. Let them cool.
