My son, after making these cookies, said, “Mom, I think every single family should try these. They’re my favorite ever!”

I’m not sure what holiday traditions you have, but when it comes to dinner menu for Thanksgiving we tend to do things pretty much the same every year around here. Every now and then someone will bring a new dish or two just to try it out, but for the most part we have our favorites and we stick to it.

Except for the desserts…we do have our pecan and pumpkin pies for those who might be disappointed to not have them available…but I am always always always looking for a new festive dessert to try as well. Truth be told I don’t love pies, so in my mind there’s got to be some other kind of option to choose from.

These cookies are perfect for the fall…a little bit of pumpkin, a lot of almond, kid approved and festive too. We’ll definitely be making more for Thanksgiving this year.

So, I found a few more adorable options I put down below. I think a custom cutting board, some cute measuring cups, maybe a wooden spoon and a favorite dessert recipe would make such a great gift idea for Christmas!

Ingredients

  • dough:
  • 1 cup butter, softened
  • 2/3 cup granulated sugar
  • 1/2 tsp almond extract
  • 2 cups all purpose flour
  • filling:
  • 1/4 cup pumpkin pie filling
  • 2 T cream cheese
  • 1 tsp pumpkin pie spice
  • topping:
  • coarse sugar
  • 1 cup powdered sugar
  • 2/3 tsp water or milk
  • 1 1/2 tsp almond extract
  • pecan halves (optional)

Instructions

  • In medium bowl beat butter for 30 seconds. Add granulated sugar and 1/2 tsp almond extract. Beat until combined. Beat in flour, little at a time, better to add a bit more flour than to have too little as cookies will come out flat with too little flour.
  • Cover dough and let chill for 1 hour.
  • Blend together pumpkin pie filling, cream cheese and pumpkin pie spice.
  • Preheat oven to 350. Shape dough into 1 in balls. Press with thumb into the center of the ball. Spoon pumpkin mixture into each indentation. Sprinkle with coarse sugar.
  • Bake for 10 minutes or until edges are lightly browned. Cook on a cookie sheet and then transfer to a wire rack. Press one pecan half into each cookie.
  • For icing: combine powdered sugar, 1 tsp of water or milk, and 1 1/2 tsp almond extract. Drizzle onto cookie generously.
  • Enjoy!!!
